Chicken Surprise
- 1 small onion--diced
- 4 skinless, boneless chicken breasts (cubed)
- 1 c. red, yellow, and green bell pepper (diced)
- 1/2 stick of oleo
- Pace Picante Sauce
- Small Pkg. of frozen whole kernel sweet corn
- 1 1/2 c. Uncle Ben's minute rice
- Med. size can of chicken broth
- 8 oz. Pkg. of Kraft shredded cheese
- Season to taste
- Cube chicken breast into bite size pieces.
- Dice bell peppers and onions.
- Saute chicken, peppers, and onions together in oleo until chicken is white and the onions are lucid.
- Add broth, salsa, and corn, bring to a boil, and let cook for 10 minutes. Add rice and cook until liquid has been absorbed.
- Turn off heat and sprinkle top with cheese.
- Cover with lid, let stand until cheese melts from the steam.
