Blackberry And Apple Sponge Recipe

  1. Peel, core and slice the apples into a pie dish, add in the blackberries and sprinkle with sugar.
  2. To make sponge:Cream butter and sugar till light and fluffy.
  3. Add in Large eggs one at a time, adding a little flour with the second egg.
  4. Mix in the remaining flour and cornflour.
  5. Spread sponge mix over fruit.
  6. Bake in a moderate warm oven 190C/375F for 30 to 40 min.
  7. Sprinkle with a little caster sugar and serve warm with cream and custard.
