Macrobiotic Tofu and Banana Chocolate Mousse

  1. Put the lightly drained tofu, soy milk, bananas, cocoa powder, and maple syrup in a blender, and blend until smooth.
  2. (I use 2 tablespoons of maple syrup.)
  3. Heat the water and kanten powder in a pot, bring to boil, then add the blended mixture a little at a time.
  4. Turn off the heat just before it comes to a boil.
  5. Pour the mixture into a mold or glass, then chill in the refrigerator until it sets.
  6. Adjust the amount of maple syrup to taste.
