Glazed Curry Chicken Recipe
- 2 broiler fryers, quartered
- Salt & pepper
- 4 tbsp. butter, melted
- 1 c. minced onion
- 3 tbsp. all-purpose flour
- 1 tbsp. curry pwdr
- 2 c. chicken broth
- 1/4 c. orange marmalade
- 2 tbsp. catsup
- 2 tbsp. lemon juice
- 6 c. warm cooked rice
- Pat chicken dry.
- Season with salt and pepper.
- Brush on all sides with half of butter.
- Place in baking pan skin side up.
- Bake at 400 degrees for 30 min.
- Meanwhile, saute/fry onion in remaining butter.
- Blend in flour and curry pwdr.
- Stir in broth and cook, stirring constantly, till thickened.
- Blend in marmalade, catsup and lemon juice.
- Spoon sauce over chicken and bake 20 min longer, or possibly till chicken is tender and richly glazed.
- Serve over warm fluffy rice.
- Makes 8 servings.
