Fiesta Tomato Wedge Salad
- 3 pounds mixed tomatoes (different colors), sliced into wedges
- 1/2 cup olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- Kosher salt and freshly ground black pepper
- 1/2 bunch fresh cilantro, leaves only
- Put the tomato wedges in a large bowl.
- Mix the olive oil, lime juice, garlic and some salt and pepper in a mason jar and drizzle over the tomato wedges.
- Scatter over the cilantro.
- Toss to combine.
