Bean Sprout Salad With Warm Shiitakes, Chinese Chives And Chinese Ham Vinaigrette Recipe

  1. In a warm saute/fry pan, coat with a little extra virgin olive oil, and saute/fry the shiitakes and shallots till soft, about 3 min.
  2. Add in the chives, and ham and stir.
  3. Deglaze with both vinegars and season.
  4. Whisk in the oil, add in mustard, check for seasoning and bring back to temperature.
  5. Drizzle on top of the bean sprouts to wilt.
  6. Mix well and verify seasoning.
  7. For Plating: Mold the salad in O-rings and drizzle with leftover vinaigrette.
  8. This recipe yields 4 servings.
  9. Suggested Wine: Cloudy Bay, Sauvignon Blanc, Marlborough New Zealand, 1998
