Spinach Madeleine
- 2 pkg. frozen chopped spinach
- 4 Tbsp. butter
- 2 Tbsp. flour
- 2 Tbsp. chopped onion
- 1/2 c. evaporated milk
- 1/2 c. vegetable liquor
- 1/2 tsp. black pepper
- 1/2 tsp. salt (optional)
- 3/4 tsp. celery salt
- 3/4 tsp. garlic salt
- 1 (6 oz.) roll Kraft jalapeno cheese
- 1 tsp. Lea & Perrins
- cayenne pepper to taste
- Cook spinach.
- Drain, reserving liquor.
- Melt butter in saucepan.
- Add flour, stirring only until smooth.
- Add onions. Cook until soft.
- Add liquor slowly, stirring to avoid lumps.
- Add milk.
- Cook until thick and smooth.
- Add seasonings and cheese (cut into smallish pieces).
- Stir until melted.
- Combine with spinach.
- Serve immediately or refrigerate overnight.
- May be topped with breadcrumbs.
- May be frozen.
- It is really better the second day!
