Salsa Kansas Taco Sauce (Mild) Recipe
- 20 lg. tomatoes, skinned, quartered, mashed
- 4 lg. onions, minced
- 4 carrots, cut coarsely
- 3 green peppers
- 3 zippy peppers (6 for medium) (9 for warm)
- 2 jalepeno peppers
- 1/2 c. parsley (1/4 c. dry)
- 3 tbsp. sugar
- 2 tbsp. salt
- 1 teaspoon pepper
- 3 tbsp. basil
- 1 teaspoon cumin
- Bottled lemon juice (not needed if freezing)
- Bring all ingredients to boil except lemon juice in large saucepan.
- Simmer till mix is desired consistency (if too coarse, blend).
- If caning:
- Boiling water bath - 35 min.
- If freezing, run through food processor and freeze.
