Easy Jellyroll

  1. Grease a 15 x 10 x 1-inch jellyroll pan and line with waxed paper; grease and flour waxed paper.
  2. Set aside.
  3. Combine eggs, baking powder and salt; beat at high speed of mixer until foamy. Gradually add 3/4 cup sugar, beating until mixture is thick and lemon colored.
  4. Fold in flour and lemon extract.
  5. Spread in prepared pan.
  6. Bake at 400u0b0 for 10 to 12 minutes.
  7. Sift powdered sugar in a 15 x 10-inch rectangle on a linen towel.
  8. When cake is done, immediately loosen from sides of pan and turn out on sugar. Peel off paper; starting at narrow end, roll up cake and towel together.
  9. Cool on a wire rack, seam side down, for 10 minutes. Unroll cake; remove towel.
  10. Spread cake with jelly and re-roll. Place on serving plate, seam side down.
  11. May garnish with strawberries and cream.
