Pork-Apple Meatballs with Egg Noodles
- 1 pound Ground Pork
- 8 Tablespoons Fresh Parsley, Chopped, Divided Use
- 1 cup Sharp Cheddar Cheese, Grated
- 3/4 cups Panko Bread Crumbs
- 1 whole Granny Smith Apple, Peeled And Grated
- 1/2 whole Onion, grated
- 1 whole Egg, Beaten
- Salt And Pepper, to taste
- 12 ounces, weight Package Of Egg Noodles
- 4 Tablespoons Butter, cut into pieces
- Preheat broiler.
- Line a rimmed baking sheet with foil and grease (really good) with butter.
- In a large mixing bowl, combine 3 Tablespoons of chopped parsley and all of the other ingredients except the noodles and butter.
- Shape into small to medium size meatballs (youll have at least 16) and arrange on baking sheet.
- Broil until golden and cooked through, 8 to 10 minutes.
- Meanwhile, in a pot of boiling salted water, cook noodles according to package instructions until al dente.
- Drain and return to pan and toss with the butter and 5 tablespoons fresh parsley, chopped.
- Add salt and pepper to taste.
- Divide noodles onto plates and top with meatballs.
