Beef Flank Steak, Roasted
- 3 ounce beef flank steak, raw
- 1 garlic cloves
- 1 tablespoon balsamic vinegar
- 1 teaspoon extra virgin olive oil
- 1/4 teaspoon salt
- 1 teaspoon dried basil leaves
- 1 carrot Target 2 lb For $3.00 thru 02/06
- 1 whole wheat dinner rolls
- 1/8 pound strawberries Safeway 1 lb For $3.99 thru 02/09
- 1/8 pound blueberries Whole Foods 3 For $10.00 thru 02/09
- 1/2 BREYERS Vanilla Lowfat Yogurt, 8-oz. container
- 15 piece/slice bear-shaped cinnamon graham snacks
- Trim fat from flank steak.
- Peel and mince garlic; place in small bowl with Balsamic vinegar, olive oil, basil and salt.
- Whisk together.
- Wash and peel carrot; slice thinly.
- Place a large piece of aluminum foil inside of a shallow oven-safe container.
- Place meat on foil.
- Spread olive oil mixture over top of meat, and place sliced carrots on top of meat.
- Seal foil tightly around flank steak.
- Bake at 450 degrees Fahrenheit for 35 to 40 minutes.
- (Serve meat and carrots with a whole wheat dinner roll.)
- While meat roasts, create Very Beary Teddy Parfait by slicing strawberries (1/8 pound = about 3 to 4 large berries), and then combining them with blueberries (1/8 pound = 1/2 cup) and yogurt (1/2 container = 1/2 cup).
- Layer 1/2 of the graham snacks and yogurt mixture in parfait glass.
- Refrigerate.
- Top with remaining graham snack just before serving.
