Herbed Marinated Tomatoes

  1. Blanch and peel tomatoes and place in deep bowl.
  2. Combine oil, vinegar, parsley, scallions, marjoram and pepper; blend well and pour over tomatoes.
  3. Cover and refrigerate several hours or overnight, spoon herb mixture over tomatoes occasionally.
  4. At serving time spoon herb mixture over tomatoes again.
  5. Add small amount of salt if you must!
  6. Serve on lettuce-lined platter for pretty presentation.
