Easy Baked Cod
- 12 oz. fresh or frozen cod fillet (thawed, if frozen) King Sooper's 1 lb For $7.99 thru 02/09
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 4 cups frozen mixed vegetables
- 4 cups rotini pasta, uncooked
- 3 Tbsp. balsamic vinegar
- 8 cups fresh chopped spinach leaves
- 32 fl oz (4 cups) drinking water
- Preheat oven to 350F.
- Place a sheet of foil in the center of a baking sheet; place cod on foil.
- Rub olive oil and lemon juice into cod; top with vegetables.
- Wrap foil tightly and place in oven for 20-30 min., or until cod flakes easily with a fork.
- Cook pasta according to package instructions.
- Serve alongside equally divided cod and vegetables.
- Sprinkle vinegar over spinach leaves; season if desired.
- Divide into 4 equal servings.
- Serve each meal with an 8 fl oz glass of water.
