Easy Baked Cod

  1. Preheat oven to 350F.
  2. Place a sheet of foil in the center of a baking sheet; place cod on foil.
  3. Rub olive oil and lemon juice into cod; top with vegetables.
  4. Wrap foil tightly and place in oven for 20-30 min., or until cod flakes easily with a fork.
  5. Cook pasta according to package instructions.
  6. Serve alongside equally divided cod and vegetables.
  7. Sprinkle vinegar over spinach leaves; season if desired.
  8. Divide into 4 equal servings.
  9. Serve each meal with an 8 fl oz glass of water.
