Apple Cranberry Crisp

  1. Peel and core apples; slice into thin wedges.
  2. In a large bowl, stir together apples and cranberries.
  3. Turn into an 11x9-inch baking dish.
  4. In a bowl, stir together flour, rolled oats, sugar, ginger, cardamom, and cinnamon.
  5. Using fingers, work in butter until pea-size crumbs form.
  6. Sprinkle over fruit.
  7. Bake in 350F oven until bubbling around edges and topping is set and deep golden brown, about 1 hour.
  8. Check after 45 minutes; if topping is becoming too dark, cover loosely with foil.
  9. Let stand about 10 minutes before serving.
  10. Makes 8-10 servings.
