Pineapple-Oatmeal Cookies

  1. Drain pineapple well.
  2. Reserve 1/2 cup syrup.
  3. Beat sugar and margarine in large bowl until light and fluffy.
  4. Beat in egg, drained pineapple and reserved 1/2 cup syrup.
  5. Combine remaining ingredients in medium bowl; blend into pineapple mixture.
  6. Drop by 2 heaping tablespoonfuls, 2 inches apart, onto greased cookie sheets.
  7. Flatten tops with back of spoon.
  8. Bake in 350F (180C) F oven 20 to 25 minutes until golden.
  9. Cool on wire racks.
