Carne Guisada

  1. Cut pork into tiny pieces.
  2. Brown in shortening; add chopped onion and tomatoes; stir together.
  3. Add flour slowly (do NOT use masa harina!).
  4. Stir until thickened as like gravy, then add 2 cups water.
  5. To suit, add: garlic powder, salt, pepper, liberal dose cumin.
  6. Stew on medium low for 30 to 45 minutes.
  7. Serve with refritos, Spanish rice.
