Leave It Alone Tabbouleh
- 110 g bulgur wheat or 100 g couscous
- 600 ml water
- 12 cucumber, diced
- 2 medium tomatoes, deseeded and diced
- 1 lemon, juice of
- 14 cup fresh parsley, chopped
- 14 cup of fresh mint, chopped
- 1 tablespoon olive oil
- Soak the grain in the water for 30 minutes Then drain and squeeze out excess water.
- Mix in the tomato and cucumber and leave to stand for 30 minutes.
- Add oil and herbs and serve.
