Graham Cracker Tapioca Pudding Recipe
- 3 c. lowfat milk
- 1/2 c. raisins
- 6 tbsp. sugar
- Dash of salt
- 2 tbsp. tapioca
- 1 teaspoon vanilla
- 3/4 c. graham cracker crumbs (about 10 crackers)
- 1 egg, slightly beaten
- Scald lowfat milk and add in tapioca to it.
- Cook till clear.
- Crush graham crackers and add in crumbs to tapioca mix.
- Add in raisins, sugar, salt and vanilla.
- Mix in slightly beaten egg and stir.
- Pour into a 1 1/2 qt buttered baking dish and bake at 325 degrees for 45 min or possibly till set.
