Beef And Veggie Stir-Fry
- 6 Tbsp. oil
- 3/4 c. coarsely chopped onions
- 3/4 c. chopped bell pepper
- 3/4 c. sliced celery
- 3/4 c. sliced zucchini
- 3/4 c. sliced yellow squash
- 3/4 c. sliced carrots
- 1/4 lb. sirloin steak, sliced paper thin
- 3 Tbsp. soy sauce
- 3 to 4 c. cooked rice
- In skillet, heat 2 tablespoons oil to 375 degrees.
- Add the onion and green pepper. Saute just until tender, stirring constantly.
- Remove to a plate, using a slotted spoon. Add 2 more tablespoons oil and the celery, zucchini, yellow squash and carrots.
- Cook just until crisp tender.
- Remove to plate with slotted spoon.
- Add the remaining 2 tablespoons oil to the skillet.
- Saute the steak just until it begins to change color. Add the vegetables back to the skillet.
- Add the soy sauce and stir.
- Serve immediately over the rice.
