Sausage and Couscous Salad

  1. Prepare the couscous following the instructions on the pack, but omitting the butter.
  2. Allow to cool, then add the sausages, apricots, scallions, oil, vinegar, cilantro and mint.
  3. Season to taste.
  4. Mix well and serve on a bed of mixed salad leaves with lemon or lime wedges.
