Easy Meatball Soup
- 1/4 cup KRAFT Zesty Italian Dressing
- 4 stalks celery, finely chopped
- 2 carrots, peeled, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 onion, chopped Safeway 1 lb For $1.49 thru 02/09
- 24 small frozen fully cooked meatballs (1/2 oz. each)
- 1 lb. red potatoes (about 3), peeled, chopped King Sooper's 5 lb For $1.88 thru 02/09
- 2 cups water
- 1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
- 1 cup frozen peas
- 1/4 cup KRAFT Grated Parmesan Cheese
- 1/4 cup chopped fresh basil
- Heat dressing in large saucepan on medium-high heat.
- Add celery, carrots and onions; stir.
- Cook 5 min.
- or until vegetables are crisp-tender, stirring occasionally.
- Add meatballs, potatoes, water and broth; stir.
- Bring to boil; simmer on medium-low heat 45 min.
- or until potatoes are tender.
- Stir in peas and cheese; cook 1 to 2 min.
- or until heated through, stirring frequently.
- Sprinkle with basil.
