Shrimp and Crab Casserole
- 1 whole Green Pepper, Diced
- 2 stalks Celery, Chopped
- 1 whole Medium Onion, Diced
- 2 cups Water
- 4 Tablespoons Butter
- 4 Tablespoons Flour
- 2 cups Half-and-half
- 1 cup Sharp Cheddar Cheese, Grated
- 1 jar Pimentos (4 Ounce Jar)
- 1/2 teaspoons Salt
- 18 teaspoons Pepper
- 3 pounds Cooked, Deveined Shrimp
- 1 pound Cooked Crab Meat
- 3/4 cups Buttered Cracker Crumbs (Ritz)
- Preheat oven to 400 degrees F. Grease a 3 quart casserole dish.
- Combine peppers, celery, onion and water and cook in a small saucepan over medium heat until veggies are tender.
- Drain and set aside in a large bowl.
- Make the cheese sauce: Melt the butter, then stir in the flour until smooth.
- Gradually add the cream/half-and-half and cook until the mixture thickens, stirring constantly.
- Add cheese, pimentos, salt and pepper.
- Add the sauce, crab and shrimp to the veggies and mix.
- Put in a 3 quart casserole dish.
- Sprinkle with cracker crumbs and bake for 20 minutes.
