Shrimp and Crab Casserole

  1. Preheat oven to 400 degrees F. Grease a 3 quart casserole dish.
  2. Combine peppers, celery, onion and water and cook in a small saucepan over medium heat until veggies are tender.
  3. Drain and set aside in a large bowl.
  4. Make the cheese sauce: Melt the butter, then stir in the flour until smooth.
  5. Gradually add the cream/half-and-half and cook until the mixture thickens, stirring constantly.
  6. Add cheese, pimentos, salt and pepper.
  7. Add the sauce, crab and shrimp to the veggies and mix.
  8. Put in a 3 quart casserole dish.
  9. Sprinkle with cracker crumbs and bake for 20 minutes.
