Anniversary Strawberry Cheesecake Pie
- 10 ounces sweetened condensed milk
- 8 ounces cream cheese
- 1 egg
- 12 teaspoon vanilla
- 2 tablespoons lemon juice, divided
- 1 prepared chocolate wafer pie crust
- 1 quart strawberry
- 1 tablespoon sugar
- 2 tablespoons strawberry jam
- (Cooking time includes chill time.)
- Preheat oven to 350 degrees.
- Incorporate first five ingredients (milk, cream cheese, egg, vanilla, and 1 tbsp lemon juice), adding one at a time into stand mixer and beating thoroughly until smooth.
- Pour batter into pie crust and bake for approximately 40 minutes, until set.
- Meanwhile, slice strawberries.
- Toss with sugar and remaining lemon juice and allow to macerate in the refrigerator.
- Allow pie to cool completely (to room temperature) on a wire rack (approximately 1 hour).
- Pour juice which has accumulated from strawberries into a small saucepan, along with the strawberry jam.
- Cook over low heat until warm and slightly thickened.
- Arrange strawberries on top of pie and drizzle with sauce.
- Allow pie to chill in refrigerator, at least two hours.
- Serve with whipped cream.
