Anniversary Strawberry Cheesecake Pie

  1. (Cooking time includes chill time.)
  2. Preheat oven to 350 degrees.
  3. Incorporate first five ingredients (milk, cream cheese, egg, vanilla, and 1 tbsp lemon juice), adding one at a time into stand mixer and beating thoroughly until smooth.
  4. Pour batter into pie crust and bake for approximately 40 minutes, until set.
  5. Meanwhile, slice strawberries.
  6. Toss with sugar and remaining lemon juice and allow to macerate in the refrigerator.
  7. Allow pie to cool completely (to room temperature) on a wire rack (approximately 1 hour).
  8. Pour juice which has accumulated from strawberries into a small saucepan, along with the strawberry jam.
  9. Cook over low heat until warm and slightly thickened.
  10. Arrange strawberries on top of pie and drizzle with sauce.
  11. Allow pie to chill in refrigerator, at least two hours.
  12. Serve with whipped cream.
