Feijoada(Black Beans And Rice)
- 1 lb. dry black beans
- water
- 1 Tbsp. soda
- 1 tsp. olive oil
- 1 c. onion, chopped
- 1 c. celery, chopped
- 1 c. bell pepper, chopped
- 1/2 lb. ground beef
- 1 pkg. kielbasa sausage
- 1 pkg. Italian sausage
- 1/2 lb. ham, chopped in cubes
- 8 cloves garlic
- 1 Tbsp. cayenne pepper
- 8 Chinese chili peppers
- 2 Tbsp. cumin
- 2 Tbsp. oregano
- 2 Tbsp. chili powder
- 2 Tbsp. thyme
- salt and pepper to taste
- rice to serve 8
- Soak beans and soda overnight in enough water to cover.
- Drain and rinse thoroughly.
- The next day, saute onion, celery and bell pepper in olive oil in a Dutch oven.
- Brown meats together. Drain.
- Add to onion mixture.
- Add beans, then 3 quarts water. Bring to a boil.
- Add remaining spices, stir well and let simmer for 2 hours, stirring occasionally.
- Serve over rice.
- Serves 8.
