Dijon Potato Salad

  1. Place a steamer basket in a saucepan filled with one-inch of water.
  2. Bring to a gentle boil.
  3. Add potatoes.
  4. Cover and cook just until tender, 15-20 minutes; tossing occasionally.
  5. In a serving bowl, combine vinegar and Dijon; season with salt and pepper.
  6. Add hot cooked potatoes; toss.
  7. Let cool, tossing occasionally.
  8. Add oil and parsley to cooled potato mixture.
  9. Season with salt and pepper, and toss.
