Tortilla Stack
- 1 lb ground beef
- 1 (15 1/4 ounce) can black beans
- 1 (15 1/4 ounce) can corn, drained
- 16 ounces salsa
- corn tortilla
- 1 cup shredded cheddar cheese
- Mexican rice
- sour cream
- lettuce
- tomatoes
- Pre-Heat Oven to 350F.
- Cook and drain hamburger meat.
- Cook mexican rice per directions on package.
- Mash beans (unless prefered whole).
- Add corn and salsa to beans.
- Spray casserole dish with non-stick spray.
- Place tortillas on the bottom.
- Continue layering meat, bean mixture, rice, and cheese.
- Then tortillas etc.
- until you end with cheese on top
- Bake until cheese is melted and layers are hot/warm.
- Top with sour cream, tomatoes, and lettuce as desired.
