Cheesy corn casserole
- 4 slice of bacon, diced
- 6 tsp unsalted butter, cubed
- 4 clove garlic, chopped
- 1/2 cup flour
- 3 cup milk
- 4 oz cream cheese, cubed
- 2 oz velvetta, cubed
- 2 cup shredded extra sharp chedder cheese
- 1 tsp paprika
- 1 salt and pepper to taste
- 3 lb fresh or frozen corn
- Heat oven 375.
- Cook bacon in a 6qt saucepan over medium heat, and cook, stirring until brown about 8 min.
- Add butter and garlic, and cook until fragrant, about 1 min.
- Add flour, and cook, stirring for 1min.
- Whisk in milk and bring to a boil cook stirring constantly until thickened about 2 min.
- Add cream cheese, velvetta, chedder and paprika and cook until smooth.
- Remove from heat and add in the corn and salt and pepper.
- Transfer to a 9x13 pan.
- Cook until bubbily and brown about 40min.
- Allow to cool before serving.
