Spanish rice.
- 1/4 cup onion, chopped
- 2 cup white rice
- 1 can pinto beans
- 1 tbsp taco seasoning
- 1/2 can tomato sauce
- 1/4 cup green bell pepper, chopped
- 1 cup shredded cheese colby monterey jack
- On a casserole on high heat heat up all ingredients, pour rice last, then add 2 cups of water and let it sit until water is absorbed.
- Lower the heat and move the rice with a big spoon, let it cook thoroughly for about 15 more minutes.
- Add the cheese
