Chive Dressing
- 10 1/4 ounces soft tofu, drained
- 3 tablespoons Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 small garlic clove
- 1 bunch fresh chives, minced
- Puree first 4 ingredients in blender or processor until smooth.
- Season to taste with salt and pepper.
- Transfer mixture to small bowl.
- Stir in chives.
- (Can be prepared 4 days ahead.
- Cover and chill.)
