Chicken Scallopini And Spaghetti
- 2 boneless chicken breasts, skinned
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- 1/2 c. all-purpose flour
- 2 Tbsp. oil
- 3 Tbsp. butter or margarine
- 2 Tbsp. fresh lemon
- hot cooked spaghetti
- grated Parmesan cheese
- chopped parsley
- Cut chicken breasts into half.
- Place each half between two pieces of waxed paper.
- Pound until 1/4-inch thick.
- Sprinkle chicken evenly with garlic powder and pepper.
- Coat with flour. Heat oil and 2 tablespoons of butter in a large skillet over medium heat until hot.
- Cook chicken until done and lightly brown, about 4 minutes on each side.
- Remove chicken to warm platter.
- Heat remaining butter in same skillet until melted.
- Stir in lemon juice and pour over chicken.
- Garnish with chopped parsley and lemon slices.
- Serve with spaghetti and Parmesan cheese.
