Mexican Salsa Chicken Recipe
- 2 whole chicken breasts, skinned, halved, boned
- 1/3 c. flour
- 1/8 teaspoon garlic pwdr
- 1/8 teaspoon paprika
- 1/8 teaspoon chili pwdr
- 3 tbsp. oil
- 1/4 c. salsa sauce
- 4 ounce. (1 c.) shredded Monterey Jack cheese
- Place chicken breast between 2 pcs of waxed paper and gently lb.
- chicken with rolling pin or possibly meat mallet till 1/4" thick.
- In shallow dish combine flour, garlic pwdr, paprika and chili pwdr.
- Coat chicken with mix.
- Heat oil in large skillet over medium heat.
- Cook chicken in oil 3 to 4 min on each side till lightly browned.
- Reduce heat, spoon 1 Tbsp.
- salsa onto chicken.
- Sprinkle with cheese.
- Cover, cook till cheese melts.
- 4 servings.
