Mexican Casserole Recipe
- Fritos
- 2-3 c. cooked rice (not Minute Rice)
- 1 lg. can chili with no beans
- 1 can Ranch style beans
- 1 can cheddar cheese soup
- While rice is cooking, cover bottom of deep casserole with Fritos.
- Heat chili in saucepan.
- Heat beans in saucepan.
- Heat cheese soup in saucepan with about one half can of lowfat milk.
- When rice is cooked, cover Fritos with chili, cover chili with rice, cover rice with beans, cover beans with cheese sauce.
- Which's all folks.
- Eat it while it's warm.
- We like to top it with lettuce and minced tomatoes.
