Pineapple Upside Down Cake
- 1 small can pineapple ring, drained
- 125 g margarine
- 125 g caster sugar
- 2 eggs
- 100 g self raising flour
- 1 teaspoon baking powder
- Preheat oven to 180c (gas mark 4).
- Line and grease an 8 inch cake tin.
- Arrange pineapple rings onto the base of the tin.
- Melt together 25g of the margerine and 25g of the caster sugar and pour over the pineapple.
- Beat together all the remaining ingredients until fluffy and smooth and spoon over the fruit.
- Bake for 25-35 minutes and serve hot or cold with custard, cream or ice cream.
