Baked Cod with Marinated Tomatoes

  1. Spray 2 full hotel pans with cooking spray (or 1 half hotel pan for trial recipe).
  2. Place fish in single layer in pans.
  3. Bake in 425F-convection oven for 7 to 9 minutes or until fish flakes easily with fork.
  4. Toss tomatoes with dressing and chives.
  5. For each serving: Place 1 fish piece on serving plate; top with 3 Tbsp.
  6. of the tomato mixture.
