Baked Cod with Marinated Tomatoes
- 25 each Cod fish filets (6 oz.)
- 3-1/4 cups red tomatoes, finely chopped
- 1-1/2 cups yellow tomatoes, finely chopped
- 1 cup KRAFT Light Italian Reduced Fat Dressing
- 1/2 cup fresh chives, chopped
- Spray 2 full hotel pans with cooking spray (or 1 half hotel pan for trial recipe).
- Place fish in single layer in pans.
- Bake in 425F-convection oven for 7 to 9 minutes or until fish flakes easily with fork.
- Toss tomatoes with dressing and chives.
- For each serving: Place 1 fish piece on serving plate; top with 3 Tbsp.
