Low Calorie Chili(280 Calories Per Serving)
- 1 Tbsp. salad oil
- 2 c. sliced celery
- 1 c. chopped onions
- 1/2 c. chopped green pepper
- 1 garlic clove, minced
- 1 lb. ground beef round steak
- 1 (16 oz.) can kidney beans, drained
- 1 (28 oz.) can tomatoes
- 1/2 tsp. salt
- chili powder
- In large pot over medium heat in hot oil, cook celery, onions, green pepper and garlic until onions are tender, about 5 minutes. Add meat and cook until meat is browned, stirring occasionally. Stir in kidney beans, tomatoes and their liquid, salt and 1 1/2 teaspoons chili powder; heat to boiling.
- Reduce heat to low and simmer 40 to 45 minutes, stirring occasionally.
- Just before serving, stir in enough chili powder to give desired "hotness". Makes 6 servings.
