Honey-BBQ Meatloaf with a Kick
- 2 lb. (900 g) extra-lean ground beef
- 24 rich round crackers, crushed (about 1 cup)
- 1 large egg, beaten
- 2 Tbsp. dried minced onions
- 1 Tbsp. garlic powder
- 2 Tbsp. honey
- 1/4 tsp. ground black pepper
- 1 can (19 fl oz/540 mL) diced tomatoes, drained, divided
- 1/4 cup Bull's-Eye Bold Original Barbecue Sauce, divided
- 1 Tbsp. plus 2 tsp. Lea & Perrins Worcestershire Sauce, divided
- Heat oven to 350 degrees F.
- Mix meat, cracker crumbs, egg, onions, garlic powder, honey, pepper, half each of the tomatoes and barbecue sauce, and 2 tsp.
- Worcestershire sauce just until blended.
- Shape into loaf in 9x5-inch loaf pan sprayed with cooking spray; flatten top with spatula.
- Mix remaining tomatoes, barbecue sauce and Worcestershire sauce until blended; spoon over meatloaf.
- Cover; place pan on rimmed baking sheet.
- Bake 1 hour or until done (160 degrees F), uncovering for the last 15 min.
