Mama'S Vegetable Soup
- soup bone
- 1 pkg. stew meat
- 1 large onion
- 2 stalks celery
- 1 large can or jar tomatoes
- salt, pepper and red cayenne pepper
- 1/2 c. barley
- chopped green pepper
- 1/8 to 1/4 head cabbage
- 2 sliced carrots
- 1 small can green beans
- 1 small can whole kernel corn
- 3 potatoes, cut up
- 1 turnip, cut up
- small amount spaghetti
- Using a large pot, put soup bone (make good broth) and stew meat together with onion, celery and tomatoes.
- Add enough water to fill 3/4 pot.
- Add salt, pepper and red cayenne pepper.
- Cover. Simmer several hours or half or all day.
- Skim off fat; discard bone.
- Add barley, green pepper, cabbage, carrots, green beans and corn.
- Cook for at least 1 hour.
- Then add potatoes, turnip and spaghetti.
- Correct seasoning, adding more water if necessary. Cook 15 more minutes.
- Makes a large amount.
