Coconut Banana Tea Loaf

  1. preheat oven at 325 degrees C
  2. seive together all the dry ingredients
  3. whisk eggs until fluffy.
  4. add the canola oil, whisk.
  5. add the honey and whisk.
  6. add the mashed banana to the egg mixture and mix well.
  7. add the desiccated coconut, mix well.
  8. add the egg mixture to the centre of the flour and mix until all the ingredients are incorporated.
  9. fold on the coconut cream and raisins.
  10. pour into a loaf pan, bake for 50 minutes or until an inserted toothpick comes out clean.
