Neese'S Sausage Cake
- 1 lb. Neese sausage (mild)
- 2 c. brown sugar, packed
- 3 eggs
- 3 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 c. orange juice
- 1 c. applesauce
- 1 c. chopped nuts
- 1 c. raisins, soaked in hot water for 10 minutes, then drained
- Preheat oven to 300u0b0.
- Cream sausage with sugar; add eggs, one at a time, beating well after each egg.
- Sift dry ingredients together.
- Add alternately with orange juice.
- Add applesauce next.
- Fold in raisins and nuts.
- Pour in greased and floured tube pan.
- Bake at 300u0b0 for 1 1/2 hours.
- Let stand for 15 minutes in pan before removing from pan.
- Keep refrigerated.
