Asparagus Guacamole

  1. Combine asparagus and water in a 2-quart saucepan.
  2. Bring to a boil over medium-high heat to medium-low.
  3. Simmer 8 to 10 minutes, or until asparagus is tender.
  4. Rinse with cold water; drain.
  5. Blot asparagus with paper towel to remove excess moisture.
  6. Combine asparagus, yogurt and lemon juice in a food processor or blender.
  7. Process until smooth.
  8. In a medium mixing bowl, combine asparagus mixture and remaining ingredients.
  9. Chill, if desired.
  10. Serve with raw veggies or tortilla chips.
