BBQ Ranch Chicken Panini
- 2 Tablespoons Ranch Dressing
- 4 Tablespoons Barbecue Sauce
- 4 slices Turkey Bacon, Cooked
- 6 ounces, weight Grilled Chicken Strips
- 4 slices Sourdough Bread
- 1/2 cups Shredded Mozzarella
- In a small bowl mix together the ranch dressing and BBQ sauce, and set aside.
- Cook the turkey bacon according to package directions, and set aside.
- Heat the chicken strips according to package instructions.
- I find that when heating the frozen, pre-cooked chicken strips its good to place them on a paper towel on a microwave safe plate, to absorb the excess water.
- Heat up your panini press or George Foreman grill and spray with cooking spray.
- Then spray the tops of each slice of bread with the cooking spray (this will help it cook up nice, golden, and crunchy without adding a lot of calories).
- On the other side of each piece of bread, slather on some of the BBQ ranch sauce.
- Then add your chicken to that side, and layer with a little cheese, bacon, a little more cheese and a little more sauce, place top slice of bread on with greased side up.
- And grill on your panini press until golden and the cheese is melted.
- Serve warm.
