Alain Senderens's Syrup for Tropical Fruits

  1. In a small saucepan, combine the water and sugar.
  2. Add the citrus zests, coriander seeds, ginger, clove and mint sprig.
  3. Scrape the seeds from the vanilla bean; add the seeds and bean to the pan.
  4. Simmer over moderate heat for 8 minutes.
  5. Cool to room temperature, then strain.
  6. Stir in the lime juice.
