Smashed Yukon Potatoes

  1. Cover potatoes and garlic with cold, salted water.
  2. Boil until potatoes are fork tender.
  3. Drain.
  4. Return to pot.
  5. Turn on high heat for one minute to remove excess moisture.
  6. Add remaining ingredients.
  7. Smash potatoes and fold ingredients together.
  8. Variations; mustards, fresh herbs, veggie purees...the possibilities are endless!
