Smashed Yukon Potatoes
- 3 lb Yukon gold potatoes
- 8 clove garlic; smashed and peeled
- 3/4 oz rosemary; minced
- 1 stick butter; cubed
- 1 packages bacon; cooked and diced
- 1/2 cup grated parmesan
- 1 cup aged sharp cheddar; shredded
- 1/2 cup heavy cream
- 2 tbsp sour cream
- 1 salt and pepper
- Cover potatoes and garlic with cold, salted water.
- Boil until potatoes are fork tender.
- Drain.
- Return to pot.
- Turn on high heat for one minute to remove excess moisture.
- Add remaining ingredients.
- Smash potatoes and fold ingredients together.
- Variations; mustards, fresh herbs, veggie purees...the possibilities are endless!
