Good Morning! Healthy Breakfast Scramble
- 2 eggs
- 3 tbsp diced onion
- 1/4 diced jalepeno
- 3 tbsp diced zucchini or squash
- 3 tbsp diced bell pepper
- 1 tbsp butter
- 1 tbsp water
- Saute onions, bell peppers, jalapeno and zucchini/squash until soft in about 1 tbs butter plus a tiny bit of oil to keep butter from burning (don't worry, it's healthy for you and helps your body digest nutrients)
- Meanwhile, Scramble eggs and water in a bowl.
- Season with salt, pepper, and garlic powder
- Add eggs in pan and cook until no longer wet
- I eat my eggs with some salsa.
- Enjoy!
