Fruitcake Cookies
- 1/2 lb. yellow candied pineapple
- 1/2 lb. red candied cherries, chopped
- 1/2 lb. green candied cherries, chopped
- 2 1/2 c. chopped seedless dates
- 4 c. chopped pecans
- 1 1/2 c. all-purpose flour, divided
- 1/4 c. margarine or butter, softened
- 1/2 c. firmly packed brown sugar
- 2 eggs
- 1/4 c. strawberry jelly
- 2 tsp. baking soda
- 1 1/2 Tbsp. milk
- 1/2 tsp. allspice (powdered)
- 1/2 tsp. cinnamon (powdered)
- 1/2 tsp. cloves (powdered)
- 1/2 tsp. nutmeg
- Combine first five ingredients and dredge in 3/4 cup flour, mixing well.
- Set aside.
- Cream butter or margarine in large bowl; gradually add sugar, beating well at medium speed of mixer.
- Add eggs and jelly, mixing well.
- Dissolve soda in milk; add to creamed mixture.
- Add remaining 3/4 cup flour and spices; mix well.
- Fold nut and fruit mixture into batter.
- Drop by rounded teaspoonfuls onto greased cookie sheet.
- Bake at 325u0b0 for 12 minutes or until done.
- Cool on wire racks.
- Yields 12 dozen or 144 cookies.
