Iced Cornmeal Sugar Cookies
- 2 cups cornmeal
- 12 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 14 teaspoon salt
- 12 cup butter
- 14 cup milk
- 1 egg
- 2 cups powdered sugar
- 3 tablespoons milk
- food coloring
- Combine cornmeal, sugar, baking soda, baking powder and salt in a large bowl.
- Cut in butter with your fingers, until small crumbs form.
- Add milk and egg.
- Dough should be firm.
- If it seems wet, add more cornmeal and sugar to your own discretion.
- (If dry, add milk in Tbsp increments.)
- Roll dough into a thick tube, wrap in waxed paper, and refrigerate for several hours or overnight.
- Preheat oven to 350F Grease a large baking sheet, remove dough from fridge, and slice into 1/4 inch thick rounds.
- Place cookies on baking sheet.
- Bake for 10 minutes or until firm and golden.
- Meanwhile, combine powdered sugar and 3 Tbsp milk.
- Separate this icing base into as many bowls as you'd like colors, and add a drop of food coloring to each bowl.
- After cookies have cooled, ice them with the powdered sugar icing.
