Iced Cornmeal Sugar Cookies

  1. Combine cornmeal, sugar, baking soda, baking powder and salt in a large bowl.
  2. Cut in butter with your fingers, until small crumbs form.
  3. Add milk and egg.
  4. Dough should be firm.
  5. If it seems wet, add more cornmeal and sugar to your own discretion.
  6. (If dry, add milk in Tbsp increments.)
  7. Roll dough into a thick tube, wrap in waxed paper, and refrigerate for several hours or overnight.
  8. Preheat oven to 350F Grease a large baking sheet, remove dough from fridge, and slice into 1/4 inch thick rounds.
  9. Place cookies on baking sheet.
  10. Bake for 10 minutes or until firm and golden.
  11. Meanwhile, combine powdered sugar and 3 Tbsp milk.
  12. Separate this icing base into as many bowls as you'd like colors, and add a drop of food coloring to each bowl.
  13. After cookies have cooled, ice them with the powdered sugar icing.
