Special Blueberry Muffins

  1. Preheat oven to 375 degrees.
  2. Grease muffin pans.
  3. Sift flour with baking powder and salt; set aside.
  4. In large bowl, with a mixer or wooden spoon, cream butter with sugar until light and fluffy.
  5. Add eggs, one at a time, beating after each addition until well blended.
  6. Add flour mixture alternately with milk, beating by hand just until combined.
  7. With fork, mash 1/2 cup blueberries, stir with fork.
  8. Add rest of whole blueberries, mixing in gently.
  9. Fill muffin tins about 3/4 full.
  10. Sprinkle each with sugar.
  11. Bake 25 to 30 minutes or until lightly browned.
  12. Let cool in pans about 1/2 hour before removing.
  13. Serve warm.
  14. Makes 1 to 1 1/2 dozen.
