Roasted Red Pepper and Spinach Zucchini Rollups

  1. Preheat oven to 375.
  2. In a medium bowl mix red pepper, spinach, gouda cheese slices, bacon, garlic and black pepper.
  3. Spoon 1 tbsp of mixture onto the bottom end of the zucchini slice.
  4. Roll the zucchini slice up and secure with a toothpick.
  5. Garnish with a sprinkle of fresh chopped dill on top.
  6. Bake for 20-25 minutes on a lightly greased baking sheet.
  7. Serve warm.
