Roasted Red Pepper and Spinach Zucchini Rollups
- 1 large zucchini sliced extremely thin lengthwise
- 1/2 cup roasted red pepper
- 2 slice bacon, cooked and crumbled
- 3 slice smoked gouda cheese, thinly sliced
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 1/2 cup fresh spinach
- 1 pinch fresh dill
- 1 toothpicks
- Preheat oven to 375.
- In a medium bowl mix red pepper, spinach, gouda cheese slices, bacon, garlic and black pepper.
- Spoon 1 tbsp of mixture onto the bottom end of the zucchini slice.
- Roll the zucchini slice up and secure with a toothpick.
- Garnish with a sprinkle of fresh chopped dill on top.
- Bake for 20-25 minutes on a lightly greased baking sheet.
- Serve warm.
