Warm Gfcf Pineapple and Pumpkin Cereal
- 23 cup brown rice
- 13 cup lentils
- 1 (20 ounce) can pineapple slices (in juice)
- 1 (15 ounce) can pumpkin
- 4 tablespoons dark brown sugar
- 1 teaspoon ginger powder
- In a blender, grind the grains and beans on high for 2 minutes.
- Pour the powder into a heavy-bottomed pot.
- Crack open the pineapple can and drain out the juice into a pyrex measuring cup.
- Add enough water to the juice to make 4 cups liquid, then add to the pot and mix thoroughly.
- Rinse out the blender, and blend the pineapple slices themselves until completely smooth, add to the pot.
- Add the sugar and ginger to the pot, mix.
- Put the pot over high heat until it begins to boil, then lower heat and simmer, stirring constantly, for 10 minutes.
- Add pureed pumpkin, mixing thoroughly.
- Serve immediately, or refrigerate for later.
