Award Winning Chef : Jamaica's Ajeen Beckford Grilled Ochie Stea
- 1 lb minced mirepoix
- 2 ounces vegetable oil
- 1 teaspoon dried thyme
- 2 teaspoons dried marjoram
- 2 teaspoons salt
- 1 12 teaspoons pepper
- 1 12 teaspoons breadcrumbs
- 2 beaten eggs
- 1 fluid ounce Worcestershire sauce
- 3 12 ounces tomato juice
- 3 12 lbs ground beef
- 10 pieces sliced bacon
- 1. saute the mirepoix in the oil until tender.
- Add the herbs, salt and pepper.
- Remove from the pan and refrigerate thoroughly.
- 2. place all of the ingredients in a mixing bowl.
- Mix well until it binds.
- 3. form and cook a test piece.
- Adjust seasoning and consistency if necessary.
- 4. scale into equal sized portions and flatten like a hockey puck.
- Wrap each steak with a strip of bacon and secure with a toothpick.
- 5. mark on a well-oiled grill and then finish in a 325F oven, 10-15 minutes.
